Does Apple Watch provide significant health benefits for users who do not subscribe to Fitness+?

Absolutely!
Fitness+ is “just” the Trainer-led exercises, yoga, meditation, etc., that you can subscribe to. The Fitness app, which Fitness+ is a part of if you subscribe to it, displays your daily activities; Stand, Move, Exercise, steps, distance, flights climbed, etc., regardless of if you subscribe to Fitness+.
Apple Watch collects and displays metrics/data such as ECG, Blood Oxygen, Sleep data, loud noises, Heart Rate, etc., in addition to Fitness and Fitness+ data.
The Apple Watch will also detect if you fall (and call emergency services if you are unable to respond), if you possibly have AFib, Sleep Apnea, and more.
I would say that the Apple Watch has significant health benefits.
